Beach House Christmas Treats
With only three months until Christmas, the well loved kitchen at The Beach House is sharing the warm and sweet aromas of fruit, spice and all things nice as Festive Season preparations commence.
Even if you can't be with us for Christmas, why not share a little taste of the Beach House with your family and friends this year with our Traditional Rich Christmas Cake or Australian Style Christmas Pudding.
Janet's Traditional Christmas Cake recipe is generous in luscious fruit with a good dash of brandy and love!
We've moved on from the old fashioned Boiled Pudding to a less "guilty" Australian version filled with mounds of macadamias and spices and sweetened by masses of plump fruit.
Both come in a variety of sizes and are simply packaged with Christmas cheer.

What's News at "The Beach House"?
Albany Chamber of Commerce and Indusrty Awards 2009
We are pleased to announce The Beach House at Bayside is the 2009 recipient of the Albany Chamber of Commerce and Industry (ACCI) City of Albany award for Tourism. We had a very successful evening and were also awarded "Runner Up" in the Wignalls Micro Business Award for Businesses with 1-5 employees.
New Televisions
New larger flat screen TVs have just been installed into our Colonnade Rooms and Garden Suite so now you can enjoy your quiet time with a DVD from the library all the more.
Enhancements for our Corporate Guests
Those of you who stay with us on business will be pleased to hear new comfortable desk chairs have been added to our Main House Rooms, Garden Suite and Downstairs Colonnade Rooms. We now also have a "handy office" box for your use while you are with us - just let us know if you need access to office supplies and we'll pop in your room prior to your arrival.
Seasonal Produce & Recipes
With the ever increasing interest in the food and wine arena we have recently launched the "Great Southern Galloping Gourmet Package" - the ultimate weekend package for those wishing to experience the best food and wine experiences our region has to offer (see launch of New Accommodation Packages). The package includes us packaging all your purchases from the local markets to take home with you - we'd love the Great Southern food experience to last you all week when you return home!
We're always thrilled to receive the many requests we get for recipes and tips on the local produce or any of our menu items. With rhubard, asparaugus and citrus fruits all on the fresh produce list at this time of year, we hope you will enjoy the following recipes and tips.
Asparagus

Asparagus comes in three varieties - Green (which we use at the Beach House), White and Purple. According to the Australian Asparagus Council.. "most green asparagus is ready-to-go. However, if the base of the stalk is tough, simply run a knife along the stalk until it meets less resistance, then cut the end off at this point. Or simply snap off the coarse ends with your forefinger and thumb".
"The Beach House" supply of asparagus - used in Keith's ever popular poached egg breakfast dish - is from Torbay Asparagus & Rasberries at Albany's Award Winning Farmer's Market. The season may be short, but the product is incomparable to the imported asparagus available in the supermarket year round.
To use your asparagus with Keith's poached egg dish ...
- Simply poach your freshest of fresh eggs to your liking
- Add asparugus to your paching pan and blanch for 2-3 minutes
- Rest asparagus spears between your eggs and top with crispy proscuitto, and add a dash of melted butter emulsified with balsamic vinegar and serve immediately.
About Torbay Asparagus & Rasberries Phillip and Sheelagh Marshall were dairy farmers in UK before coming to Australia in 1970. They started farming in the Torbay region, near Albany, in early 1971 with beef cattle.
They planted asparagus in 1972 and were amongst the first commercial growers of asparagus in WA, starting to pick in 1974. They helped establish the WA Asparagus Growers' Association in 1986, to assist other growers in the region.
They have grown a huge number of different vegetables, fruits and wild flowers over the years, whilst still keeping the beef herd. They are also still growing sweetcorn which began in 1978, as well as raspberries, boysenberries, silvanberries and loganberries, which began in 1993. Founding members of the Albany Farmers Market, they bring produce to the market every week during the growing seasons.

Lemons

Janet's Luscious Lemon Friands
300g icing sugar 60g plain flour 225mls egg whites 185 g ground almonds 200g butter melted 1/4 cup flaked almonds zest of 1 lemon juice of 1 lemon
Method
- Pre heat oven 180 degrees Celcius
- Grease 12 x friande tin with melted butter (or spray cooking oil)
- Combine icing sugar, ground almonds, flour and lemon zest
- Add melted butter, egg whites - (unwhisked) and lemon juice
- Mix gently until evenly combined (we mix gently with a hand whisk)
- Note: texture of the mixture is quiet lumpy and slippery - this is just right!
- Spoon mixture into tins - about 5/6 full
- Sprinkle flaked almonds on top
- Bake for 25-30 mins or until skewer comes out clean
- Cool for 15 mins and gently turn out of tins - do not let completely cool in tins or friands are difficult to remove and can break up as quite delicate
- Cool completely and serve dusted with icing sugar
